Viennese Ball Dance Workshops



TICKETS GO ON SALE ON MONDAY FEBRUARY 3RD AT 8AM

The Viennese Ball Dance Workshop will help patrons brush up on or develop their ballroom dancing skills before the Ball. David and Karen Goggin, longtime Viennese Ball supporters and proprietors of the Goggin Ballroom Dance studio in Eau Claire, will conduct the three-session workshop.

Instruction will focus on the waltz (slow and fast), fox trot, swing, quadrille and polka. Up to 40 people may register, alone or with partners, at any skill level.

Tavis is the author of Mushroom Cultivation, a forthcoming book on Wisconsin mushrooms, and co-author of The Beginner's Guide to Mushrooms. He is active with the Wisconsin Mycological Society, and is the founder of the Northwestern Wisconsin Myco Enthusiasts Club, as well as an active contributor to everything mushroom-related in the Midwest.

This is a class that will focus on the anatomy & breakdown of a whole hog and the benefits (health, financial & sustainability, just to name a couple) of utilizing the whole animal from head to tail. We will discuss the modern-day perception of this Old World practice and the importance of keeping its legacy alive. We are aiming to close the gap between the farmer and the dinner table. In knowing your Farmer, your Butcher & your animal; there inevitably comes a profound respect and appreciation for the craft of Butchery and ultimately, your food. Whether you're looking to learn how to fill your freezer or get a handle on your food costs, this class will start you off on the right track.

Objectives:
We will identify the USDA Standard Primal cuts that you might be familiar with, as well as identify where on the animal your favorite Steaks & Roasts come from. Throughout the process we'll hopefully introduce you to some little known Butcher's Cuts that you've never even heard of. Through this class you will gain an understanding of the anatomy, primal cuts and an extensive breakdown of the pork carcass.

We will cover cuts including (but not limited to) :
Head
Shoulder : Roasts & Steaks
Loin : Pork Chops (Boneless Or Bone In)
Ribs : Baby Back Ribs, Spare Ribs & Country Style Ribs
Pork Belly : Bacon & Pancetta & Porchetta
Hocks & Shanks
Ham : Steaks, Roasts & the ever succulent - Cured Ham
Tidbits: Trim, Bones, Offal & so much more

In addition to breaking down the animal we will have available some simple recipes for Broths, Brines, Cures, Spices and Cooking Techniques that will contribute to maximizing our final yield from this traditional craft. We'll Make Pork Carnitas Tacos for lunch to wrap up the Class!

Saltydog is a funk jam Improvisational exploration that takes the audience & band on a journey through their playfully crafted folk driven tunes inspired by the likes of everyone from The Talking Heads, The Band, those classic country and jam band staples along with everyone in between.

The band spawned on the banks of Duluth's ice covered stones by brothers Jacob and Owen Mahon. This midwestern psychedelic cowboy review features Calvin (Calzone) Lund, Lefty Johnson, Gavin St. Clair, and Sam Deters.

The band's genuine kindness, passion, enthusiasm and joy for their craft is apparent, enchanting & makes for an additive live performance. Their 2nd album Pepper dropped spring 2024 band is set to release their 3rd album in Spring 2025. The band has been known as differently original, very funky, and unpredictable in a delightful, soulful manner. There is something for everyone at a Saltydog show. You are beautiful, you are welcome, you will groove, we will vibe.

S U P E R I O R S I R E N

is an eerie folk project created by singer-songwriter Laura Sellner. The music offers an alluring expression of vulnerability & desire, with inspiration from Lake Superior and Siren mythology. When Sellner joined forces with cellist Rachel Gobin, bassist Nyssa Krause, and drummer Emma Deaner a sisterhood of sirens was formed. For the past nine years they crafted a mesmerizing blend of vocals, strings, & percussion. The band recently welcomed violinist and Duluth Superior Symphony Orchestra concertmaster Erin Aldridge, creating an all the more captivating sound and performance. Superior Siren is not for the faint of heart, and will enchant those who dare to listen.

Dave BeBeau taught himself how to play guitar back in 1987, but has been on stage since he was just a kid. His love of music started early but his rock and roll journey really got going in 2003, when he and a group of friends formed the band Contradiction.
Dave takes his love of music seriously and on occasion unplugs from the band, performing as an acoustic solo. You can expect to hear songs by James Taylor, Tom Petty, Neil Young, Charlie Daniels, America, John Cougar, Bon Jovi, to name just a few. The list of artists is constantly growing, so you might just hear something that really love.

Eggplant Heroes @ 2 Roots Art & Wine



Eggplant Heroes is an Americana collaboration among Duffy Duyfhuizen, Max Garland, Joel Pace, Olaf Lind, Dan Zerr, and Lucas Fischer. Mixing original tunes from their CDs After This Time and Better Weather with songs by others (e.g. John Prine, Jason Isbell, and John Hiatt) and a gospel tune or two. Blending four-part harmonies with guitars, fiddle, and trumpet, Eggplant Heroes tries to bring a rich and eclectic musical experience.
